Sweet Mango Idlis and toop (ghee) - great combination I had some Mango pulp I had frozen that I wanted to use to make icecream, but felt like making idlis today. Yumm!!
Recipe
Ingredients:
2 cups Idli Rawa
2 cups Mango pulp
1 cup Grated coconut
1/2 cup Jaggery
1 - 2 teaspoon Cardamom powder - or more
Salt to taste
Steps:
Grind grated coconut, jaggery pieces, mango pulp to a paste and empty into a pot.
Add the idli rawa little at a time to make sure you get the idli batter consistency. I also poured water in the blender and kept that aside, just in case I needed more water to mix it.
Add the cardamom pd and salt to taste. (I always add a pinch of salt as it enhances the taste) Mix well. This batter does not need any fermentation. You can make it right away and enjoy.
Grease the idli moulds with ghee and fill each mould with the batter and steam for about 20 minutes.
Serve hot with ghee/butter . Enjoy! Everyone loves it!!
Notes:
The same recipe can be used for ripe jackfruit as well. You can also add some chopped cashews in it, but we like it plain.
Adjust jaggery according to sweetness, this pulp was very very sweet
